Sweet Potato Coconut Curry:

2 chicken breasts cut into bite size pieces and cooked

3 spring onions chopped

2 medium sweet potatoes, peeled & chopped into small pieces

1 small onion sliced

3 celery stalks sliced into thick diagonal pieces

1 tbsp. coconut oil

1 can full fat coconut milk

1 tbsp. curry seasoning

1/2 c. water

I bought the curry season from a natural food store in a little bulk baggie. However, feel free to make your own if you can!

1. Heat pan with coconut oil. When hot, saute onion until translucent. Stie in the curry powder until the onions are covered.

2. Throw in the other veggies and sauté. Add water. Let the veggies cook until the potatoes are soft. Add coconut milk.

3. Add chicken and let the flavors simmer covered. Around 10-15 minutes.

Quick, so get it done!
